Why did the old timers…in almost every old photo I see…hang/dress deer that way…head up?

I operate under the assumption they knew better than us…out of necessity

But why?

I suspect they field dressed them where they lay. Then hanging by the head was easy as they didn't need a spreader bar.

Those are great pictures. I do feel sorry for that one horse, though. I have some similar pictures of my dad hunting in the hill country.

I grew up hunting a ranch my grandfather was on for 45+ years. I was taught to field dress them on the ground. We never brought deer into camp to field dress them. Once in camp. we would hang them by the head, and clean them out good. Never had spreader bars.

In these photos we dressed them in the field and packed backed to camp on mules. Notice the gauze body bags.

We always field dressed the mule deer as we were way back in the mountains and had about 4 hunters per truck. We wouldn't come back to camp until sunset or after all 4 got one. So the deer would ride in the back of the truck for hours. You wanted to try and keep it as cool as you could to save the meat.
