I spatchcocked and seasoned two 16lb turkeys on Saturday and put the remnants in a foil pan in the freezer for the stock pot later. I roasted the birds one after the other on my BGE on Sunday and then refrigerated them both.
The wife and I hand shredded the birds tonight for turkey enchiladas and pozole for Thanksgiving. I got the carcasses in my big stock pot but it seemed a little lacking for volume.
C'est la vie, it'll do....sat down for the evening, finished the beer I was enjoying while we processed the birds, then got up to make an old fashioned. Out of cocktail ice in the kitchen freezer, I went to get more from the fridge in the laundry room.
Opened the freezer door to get the ice and that's when I exclaimed "my necks, my backs, my turkey tails, and giblet sacks!"
Stock looks a lot fuller now.
