With Christmas rapidly approaching I'm thinking about things I'd like to have…..

A really nice chef's knife. Japanese? German?

Also interested in a nice cutting board and a charcuterie board…..

Y'all have any recs or thought on this?

There are several posters that make some great looking cutting boards. Agrams did mine a while back. I don't recall the other posters, but I have seen some cool pics they posted.

For chef's knives you can't beat Wusthof Classic. I've had a few in different styles and sizes for over a decade now and they are still like new with minimal care. They sharpen relatively easily for how well they hold an edge and take a very fine low angle edge.

For a knife, I've used a Misen for a few years and have loved it. Next I'll try out a Global.

I used a teak end grain cutting board I got off Amazon for around $90. Made in the US and about 2" thick. Works great. I oil and condition it when guests are coming over.

Most of the high end knives I'd suggest would be hard to obtain in a month time frame. That said, T Kamimura Blacksmith is dropping a few knives tomorrow afternoon (4:00 or 5:00 I think). Those are pretty up there in price. One maker who I like is Toyama Noborikoi out of Japan. His knives are available at Japanese Natural Stones. He's getting up there in age so I don't know how much longer he'll be making them. I have his 150mm petty.

For Damascus knives, check out Devin Thomas or Randy Haas.

Iron Grove Tool Company out of the Austin area is pretty budget friendly. He did my camping cook knives.

For cutting boards, a Texags poster (Evin) made me six end grain steak plates with juice grooves to go along with my Bloodroot Blades steak knife set. I'd highly recommended him.

Costco had a gigantic Teak Haus side grain cutting board for $56. I bought one a couple weeks ago. I wanted end grain, but the price was too check to turn down.

I have a custom chef's knife I had made by a guy in Western WA. He does knives on the side and is a mountain guide the rest of the time. I know one other poster on here has one of his knives. I paid $250 for mine, I would imagine his prices have gone up, but he was very reasonable and had many handle options to choose from.

Japanese carbon steel is the way to go without blowing your budget. They're light, razor sharp, and develop a really cool patina over time. The downside is they're more brittle so you can't abuse them, and you have to oil them to keep them from rusting. Here's what I have. https://www.korin.com/HMI-SCGY-210?

I bought a charcuterie board from Cupofjoe several years ago, I also have a brisket cutting board that alaskanag99's dad made, both are awesome. I believe drummer##(?) makes boards coming up to the holidays and of course agrams is the GOAT.

My favorite chefs knife is a zelite, i like it so much I've given a few of their steak knife sets as gifts. Consider them if it's the right price point

Phenix knives out of Bellville has some really nice Japanese forged knives. Bought one for my daughter as a wedding gift. Will last her a lifetime!

I have a Boos Block that we just recently got and I've been pleased with it.

Been using Wustof for years and they hold up well and are durable. Would love to get some more nice knives with how much cooking we do these days.

I like the Japanese knives. I had a German Wusthoff chef knife. I found that the Wusthoff held its edge longer but wasn't as sharp. I find the Japanese knives to be sharper but need honing more often. My Japanese knives are not top of the line but they are pretty great. I bought a handmade Nakiri while in Japan. I love it.

Those handles look kind of small. That said, as I continue to cook, I notice my hand being much closer to the blade.

Looks like all of the handles are 4.0 - 4.25" long. Also the way you hold a santoku knife you have your thumb and forefinger on the blade up by the spine, pinch grip.
