People use leaf spring metal to make knives. You'd have to talk to a knife maker.

You're also cutting it close to Christmas if you're getting something custom ordered.

My dad say that old butcher knives were made with spring steel so was hoping I could find some that are not custom.

Up until just a year or so ago, you could get "Okd Hickory" knives (made by Ontario), which are similar to what you describe. They (Ontario) shut down, so they are getting hard to find, now.

Looks like those are all carbon steel unless I'm missing something, but good idea on searching eBay. I'll browse there some more…

Any "Spring steel" used to make a knife would be high carbon steel.

You might try some of the trades days if you're near any. Canton, Bowie, usually have vendors with older knives that might be.

Texan Knives is not exactly what they claim to be. Very deceptive in their advertising. It's all new stuff some of which might be partially assembled in the US from blanks and parts that are all produced in Pakistan.
