Since this thread was bumped, I had a chance to return to Galveston last week and ate this same dish at Shark Shack. Based on that visit, I have to rescind that recommendation. This time, the fish was dry and overcooked, it was less spicy, and the cream sauce wasn't as flavorful. I was very disappointed. Either the recipe had changed or they were being less faithful to the recipe and cooking parameters.
I still enjoy Millers Seawall Grill on Seawall Ave, good seafood at relatively reasonable prices, even though you often have a long wait to be seated due to limited tables. I haven't been to Gaidos in years, but I used to really like that place too.
