I just planted two 100 gallon live oak trees here in central Texas. It being November how much and how often do I need to water right now? Continue watering through the winter? Or just water this first week, stop and then start up again in spring?

Not a tree professional, but I would say one heavy soak a week unless it's been raining and the ground is already pretty wet.

100 gallon Live Oak is probably around 4" caliper.
Rule of thumb is 1.5-2 gallons of water per caliper inch per day.
8 gallons per day x 7 days = 56 gallons per week. (Let's say 60)

Water 3x per week x 20 gallons should be a really good starting point, adjusting for rainfall. Ignore anything less than an inch of rain. Apply the 20 gallons evenly over the root ball at a slow rate so it can soak in.

You definitely don't want to water 1x per week as the root ball would dry out completely.

Keep the watering up through next summer & double the amount of water when it gets really hot.

Soaker hoses may be your friend for a good, deep watering. Remember, new roots will ONLY grow IN moisture (not saturated, but moist), and will not go through dry soil to "find" water.
Being in TexAgs jail changes a man……..no, not really
