What's on the pit on the glorious Sunday? Got this 8 pounder on at 6:15, thinking about dark it will be ready……. First really long cook on the new pit and a chance to try out the new Inkbird thermometer (EFE recommended).

Check out Inkbirds Temp and humidity controllers. I converted a spare fridge into a curing chamber using them and made some great salami in it. Nary a flame touched it.

Looks good. More interested in that pit. What model is it?

Think I'm gonna do a couple of fatties. Wife got everything I need yesterday, I just have to put it all together and fire up the smoker.

My new toy showed me a serious issue with my pit. I used my old thermometer on the new pit, and thought it was a bit off………checked with new probes and at 225 on my pit, it was really 275. BIG DIFFERENCE. I thought maybe I was cooking a bit hot in recent years, and I was right.

Got some ribs finishing up on the PBC.

Used a new rub I got from La Michoacana. It's spicy but not overwhelming.

Next up is some wings, got about 10lbs to cook.

Today is our bi-annual Meat-A-Thon. A gathering of Catholic men and their families, all whom are Bbq loving, beer drinking, and have lots of kids. Price of family admission is for each man to bbq something different, wives come up with sides and desserts.

If everyone shows up we should have: 40 +kids at the SoulSlave Casa.

Menu is :
Ribs/wings
Brisket
Brauts with home made kraut
4 whole chickens
Smoked corn On the cob
Smoked sausages
And some Dino nuggets just in case

Sides are baked beans, slaw, watermelon and other assorted stuff that prolly won't get on my plate.

I have seen a shirt recently, maybe it was at La Vaca BBQ?
