This is pretty much the consensus on making a copycat Jimmy Dean hot breakfast sausage recipe:

  • HOT:
  • 16 ounces ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon fresh coarse ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon coriander
  • 1/4 teaspoon msg (such as Accent)

I've made it before, it's pretty solid IMO. I am pretty sure on my second batch I added some brown sugar to give it a bit of sweetness to go with the heat and it was better. Not much, maybe a half tsp for 16 oz of meat. That was my personal preference.

I have made this sausage for a few years now, and even eaten it as the first meal of the day. Much to my enjoyment.

is it the minimal amount or 'aromatics' that throws it off for you? Or is it the lack of crapload of sugar?

This one is closest to the store bought breakfast sausages. They have MSG.
I like the Owen's my self. But my likes the JD. Both have MSG.

For me, loose bratwurst is the best sausage for breakfast, but is not breakfast sausage.

I have a friend who enjoys helping his buddies make their own sausage, his parents are German and owned a butcher shop. I'm not sure if he shares the family recipe but my verison is modified.

We grind it with pork shoulder with any large fat caps trimmed away. Pretty simple spices plus a good bit of fresh chopped jalapeno.

Makes it flexible to season before cooking ... For breakfast, I will usually add a little paprika or crushed red pepper before grilling.

I go 50/50 with a venison and pork grind. I like using pork belly but will just buy ground pork sometimes as well. Seasoning is per 2 lbs of meat:

1-1/2 teaspoons rubbed sage
1/2 teaspoon thyme
1 teaspoon ground pepper
1-1/2 teaspoon salt
1-1/2 teaspoon parsley flakes
1/4 teaspoon red pepper flakes (1/2 tsp if you like it spicier)
