My all time favorite was from Saunder's Sausage Farm. It was on Highway 6 between College Station and Texas World Speedway.
Interesting. I grew up in CS, but never knew of Saunder's.

Interesting. I grew up in CS, but never knew of Saunder's.
It was an older couple who owned and ran it. I think they sold it and retired around 1980 or so.

I don't think that they made their own sausage. If they did, they had to do it elsewhere since what was on the highway was mainly just a small storefront. So whatever the summer sausage that they sold was, it might easily still be around.

Their summer sausage had much more pronounced peppercorns in it. All the sausage I've seen from other places, the peppercorns were not really noticeable. In the summer sausage sold at Saunders, the peppercorns were substantial enough that their bite was very noticeable.

The peppercorns were great, but you probably wouldn't want to get more than two in a bite. Maybe not even two in a bite.
