I'm looking for a cooler I can keep lots of things in for 2-3 days. Not a 300lb Yeti that is bulky as all hell. Not a thin $30 cooler from HEB. Wheels are a plus. Anyone have any recs?

Go pick a name brand other than yeti in the size you need. It will suit your requirements just fine. Once they get up there in size it's nice to have wheels.

Put a handful of dry ice in it... that will keep whatever for three days

The key factor will be whether or not the lid is insulated. Some people like to take the hollow lid coolers and fill the lid with spray foam, but apparently that can be trickier than it sounds, and often doesn't do that much. YMMV.

It also has to do with how many times you open the lid. If you open it a lot, you aren't going to find anything that can keep regular ice for 3 full days unless the outside temperature is 12 degreeeeeeeeees.

Rtic has a scratch and dent in their store in cypress I always check their first. I really like the max cold mentioned above but I hunt in the cold Below freezing typical which makes it pretty easy to put your foot through a cooler lid when walking on your trailer. I think the rtic and yeti hold ice pretty good but the best feature maybe the durability.

Coleman xtreme is my go to when not using rtic type coolers.
