Black eyed peas and greens simmering now.

Will have some ham and boudin along with tons of junk food for supper tonight. Everyone is tired and doesn't really feel like cooking too much.

Tomorrow will be the big meal for the game. That'll be a brisket, pork butt and some spatchcock chickens as well.

This. BEP are garbage, right on down there with lima beans and pretty much all lentils in general.

If you have to season them up with everything in the pantry to make them palatable...hard F'n pass for me. I will make my traditional gumbo and enjoy an actual good food product.

Dried BEP's are much better
Store bought frozen abit better than dried
Fresh out of the garden are one of God's greatest culinary inventions ....right up there with avocados and cilantro

BEP's are gross. They aren't good with anything.

I hadn't even heard of the New Year's thing about BEP's. etc. until today. Course, I was raised by wolves in the wilderness.

I take the hambone from Thanksgiving's spiral cut ham out of the freezer and throw that into the pot with the BEP's, couple of chopped jalapenos, couple of minced garlic cloves, chopped onion, salt and pepper. Top each bowl with Trappey's. YUM!

Y'all need to discover the Instant Pot - bag of dry BEP to perfect in 30 minutes. No soak over night, no boiling etc. I don't claim to understand the physics of a pressure cooker but it works. I add a pound of bacon, onions, celery, garlic, salt, pepper, cayenne pepper, paprika. Perfection. And no risk of blowing up the kitchen like your Grandma's pressure cooker - for my fellow olds that remember those.....

We do it every year and have good memories. My favorite memory is taking my daughter on her first trip of clamming and surf fishing for perch. She was one and a half at the time, but says she remembers the trip. Wife had the beans ready once we got in from the cold with our great haul of clams and perch in the fishing bucket. Daughter has been an avid fishing fanatic ever since, can catch and clean her own fish.

I got Melissa one for Christmas and she cooked ours in it. So far she loves the Instant Pot.

I love my IP for beans. Yesterday's bep had onion, celery, garlic, a couple pork chop bones, Bay leaves, and a can of rotel. Not much different than how I make all my beans. They were delicious.

I started off by cooking bacon and eggs for breakfast. Cooked the bacon in one of my No8 cast iron skillets. Saved all the grease.

Then at dinner, heat up that bacon grease and used it to fry up probably 6oz of smoked ham leftovers from Christmas. Got that ham good and crispy, then threw in celery, onion, garlic, and crushed red pepper. Once that softened pour in a box of chicken stock and the soaked BEP's. Let that simmer down until the beans are cooked. Mash a few with a spoon to thicken it up, then simmer off the liquid until just right. Morning bacon to finished BEP's were all done in that No8 Skillet.

They were incredible. Had top sirloin pan seared with garlic butter with some fried potatoes and the BEP's.
