Headed there with a couple deer to give it a shot. What are your favorite things to get from there?

They'll skin that deer for you for 25 dollars. I was told I suck at it and they demanded they do it everytime now.

Everything I've ever had from their is awesome. Currently working off some Axis chili meat.

They make a lot of different beef summer sausages. They've all been good.

Their sweet chipotle dried sausage is amazing. I'm not sure if you can do that on the processing side, but I get a link or two every time I drive by.

We get all of our deer processed there. It's all really good, but anything sweet chipotle is awesome; breakfast links, smoked link, & dried link. Their stuffed, bacon-wrapped back straps are fantastic when cooked on smoker.

We really enjoy the chipotle sausage, but it is a bit sweeter so the first time you eat it might be a surprise.

I am a big fan of the green onion pan sausage.

This time I smoked and peppered the backstraps (make sure you tell them to halve them). I really enjoyed it thinly sliced with a good cheese plate at Christmas. It is very peppery so you may not want to just enjoy it as a meal.

Their snack-stick style dry sausage links are game-changers. I stop and buy a couple every time I pass through.

That's pretty funny. I took a deer into a place up here Colorado. I'd called ahead and he said he was full if I didn't have it skinned yet because he was busy skinning everything still from the day before. I told him I'd help him out if he could get me in. I ran up and skinned my deer and a couple of antelope for him. He offered me a job on the spot. I'm embarrassingly bad compare to my dad and uncles.

I clicked on this thread to reply with Sweet Chipotle. It's like crack for our fishing trips

fwiw, you may need to ask them to vacuum seal portions individually. My normal processor does this for you automatically. I took a deer to Belleville meat market a few years specially because of the Sweet Chipotle. When I picked it up everything was given to me in bulk and had to spend half a day with the FoodSaver

summer sausage, 25 pieces for $185 from there.
How does that compare elsewhere?

My go to, City Market (Ag owned) in Schulenburg, does not make summer sausage

I would say that's about average. If they are charging ~$50 flat for base processing and mixing pork:game around a 20:80 split that yields you ~35 lbs of product at ~$3.50/lb.

That's pretty in line with what I have seen for smoked sausage products.

Best, and probably only way, to save money at the processor is to take them boned out meat.

If that gives you sticker shock dont look at dry sausage or jerky. Im picking up 30 pounds tomorrow that cost $455.

I always bone out meat before I take it to a processor.
Not only does it save money, but it also assures the quality of that meat I get back

I did a brisket sandwich comparison stop (Buc-ees v BMM) on my way to Corpus. BMM wins! ...and "Meat is their middle name."

FYI, I'll still stop at both!

one deer and one 75-90lb hog = $700

$225 was boudin for the wild hog but it is damn good. Approximately $300 was jerky sticks that kids will have in their lunch. Phenomenal stuff but it's not cheap.
