Kruez got what they knew from when they were at Smitty's location. The Smitty's part of the family/group has the original pits, spices, and methods that bring the taste. Whenever they have cut my brisket and other meats of choice, i never knew what knife they were using. I just kind of assumed as good as the brisket was, it just sort of "magic'd" itself sliced.
Kruez probably uses the knives in a desperate attempt at separation from their roots. J/K, I am sure its pretty good, but the original location was the first BBQ joint I ever ate at a few time in the early 70s, and when I "found" it again was I was "there".
As far as knives go, Smitty's has the old style long family tables that were there back then, but not prominently displayed. On those tables are small chains hanging every few feet that once held serrated knives, community knives, for everyone sitting at the table. I am sure it they were wiped down, but dear goodness the health dept probably had a cow with that one eventually.
