Cool article. I use the dexter knives as well. All of my other knives are custom made but those Dexters have worked so well for BBQ. That said, I'm thinking of having Neil Kamimura make me a brisket slicer. We'll see...

Not too surprised by that. Both Dexter and Victorinox are good and cheap. I've got a couple of both and like the larger and more ergonomic handles of Dexter. I also have a couple of Japanese Misono knives for comparison.

Cool article. I was a little surprised my favorite BBQ knife didn't make the list anywhere. I have the 12" version. Love this thing for Brisket and Ribs

I use my lithium ion rapala electric filet knife. I know it's sacrilegious but it does a good job.

AggieChemist that rapa knife looks awesome. several reviews talk about how difficult it is to remove the blades. have you experienced that problem?

Kruez got what they knew from when they were at Smitty's location. The Smitty's part of the family/group has the original pits, spices, and methods that bring the taste. Whenever they have cut my brisket and other meats of choice, i never knew what knife they were using. I just kind of assumed as good as the brisket was, it just sort of "magic'd" itself sliced.

Kruez probably uses the knives in a desperate attempt at separation from their roots. J/K, I am sure its pretty good, but the original location was the first BBQ joint I ever ate at a few time in the early 70s, and when I "found" it again was I was "there".

As far as knives go, Smitty's has the old style long family tables that were there back then, but not prominently displayed. On those tables are small chains hanging every few feet that once held serrated knives, community knives, for everyone sitting at the table. I am sure it they were wiped down, but dear goodness the health dept probably had a cow with that one eventually.

Yeah we live close by and went once. It was quitee astonishing how bad it was. Some places have good proteins, but bad sides. Some are flipped. Harlem Road managed to have bad protein and bad sides. The brisket was just off and the slaw and potato salad were some of the worst I have ever had.
