Anybody have comments on the actual smoke that comes out? I am using a Traeger for the first time today and there is hardly any smoke at all. However it looks great so far! Any brands that produce more smoke?

Which one will get the absolute hottest and properly sear things? I am getting one in a few weeks.

My Oklahoma Joe Rider consistently hits 630-660 on high with the sear grate open.

For anyone still looking, check out the Grilla grill options. The Silverbac is built well. There is a showroom in Dallas if you want to see in person

I love my Silverbac. It gets to searing temps. Extremely durable with full SS construction.

Was in Denver playing golf today and stopped at a shop to look at Yoders. Very impressed. Almost walked out with one.

Interesting... but that's not how I use a water pan at all. I put a water pan at one end of my smoker, not under the meat. It's not there to diffuse heat. It is there to keep higher humidity in the smoker and help keep the meat moist.

Last paragraph he stated the water pan did not enhance the meat. I take keeping it moist as an enhancement. No right or wrong however. To each his own. Used it in a offset for temp stabilization. I know folks who use it in a ceramic for the same reason. Never sensed it was keeping the meat moist though.
