Got hooked on the YouTube videos with the faceless Chef in the Forest, cooking slabs of meat on open flame or iron pans. Specifically interested in the Damascus carbon steel kitchen knife/cleaver he uses.



Anyone have or used one of these?

Love watching his videos and me & bourbon ordered one, one night. I got the 3/32" chef style & like it a lot. It's stupid sharp and I use it like he does to tenderize fajitas & chicken fried steak. Then flip it over to slice & dice veggies. I find myself wrapping my pinky & ring finger around the handle & using my palm & other 3 fingers on the thick part of the metal. I didn't know how much I'd use it but it's become my kind of go-to kitchen blade.

It looks cool on his videos and for small jobs is probably fun use but if you are going to cut very much with it the large size would make it hard to get detail cutting work done and the weight would tire your arm out pretty fast.

Arrived last night. Came wrapped in oil and plastic. Read that the blade may rust so keep it oiled.



Started with a link of dry salami and it cut thin slices effortlessly. Very balanced and like a good hammer - the weight helps do the work.



The texture on the upper 2/3 of the blade is good for character, but it also gives good purchase if you like to grip that portion of a chef's knife.



The included sheath was interesting. I wasn't expecting much, but the leather and the construction is good quality. Don't normally take a good kitchen knife to the deer lease, but the sheath will allow me to throw the knife in a pack without risking damage to the blade. The depth of the blade works well as a scoop when transferring chopped items to a pan.

Overall very happy with this knife. Will use daily and especially when carving meat off of the smoker.

Bumping this because I decided to pick one of these up at 50% off from Almazankitchen.com. As far as i can tell this discount has been in affect for the last year so not necessarily a Black Friday deal. Great idea for a Christmas present nonetheless.

Ordered two last Saturday. Arriving today per tracking. Ignore their warning that it could take a while as they are each custom made. Shipping from Spain etc. if you want by Christmas you should be able to get.
Looking forward to using.
