My current trailer-mounted unit is in need of a major rebuild. We can cook up to a 1,000 pounds of meat on it, but it is a very fickle beast.
After the first of the year, my cooking team and I are looking to purchase a quality unit that can smoke no less than 35 briskets at a time. If anyone has a recommendation for a quality company, I would sure like to contact them. I know I can search the internet, but I trust the Outdoor Board because any recommendation will be based on experience. We haul our current cooker across the country, so it will have to be dependable on the road.
As for the old cooker, once we get the new rig operational, we will rebuild the unit and place it on a new under carriage. There are some modifications we will make to it to make it much less temperamental!

1) 35 brisket minimum (15 pound briskets)
2) Road-worthy: capable of hauling it around the country without normal wear/tear issues
3) Good airflow producing a clean burn
4) Some equipment storage
5) Small wood rack
