My current trailer-mounted unit is in need of a major rebuild. We can cook up to a 1,000 pounds of meat on it, but it is a very fickle beast.

After the first of the year, my cooking team and I are looking to purchase a quality unit that can smoke no less than 35 briskets at a time. If anyone has a recommendation for a quality company, I would sure like to contact them. I know I can search the internet, but I trust the Outdoor Board because any recommendation will be based on experience. We haul our current cooker across the country, so it will have to be dependable on the road.

As for the old cooker, once we get the new rig operational, we will rebuild the unit and place it on a new under carriage. There are some modifications we will make to it to make it much less temperamental!

Thank you in advance for your input! We are looking at the following from a quality manufacturer:

1) 35 brisket minimum (15 pound briskets)
2) Road-worthy: capable of hauling it around the country without normal wear/tear issues
3) Good airflow producing a clean burn
4) Some equipment storage
5) Small wood rack

There are two posters here that build pits. Aggie Fabricator and the pit man. Talk to both and see if one of them gives you a warm and fuzzy about building what you're looking for.

Or if you want to go full rhitard, buy a Moberg as suggested above. Just be prepared to wait two years for it. Not joking.

I have built some for some posters on here and for others. We have done traditional offset and reverse flow on and off trailers and built a ton of trailers of all types and sizes.
