Used to think that, but a buddy of mine brought back some summer sausage from North Dakota where those northerners go absolutely ape sht over goose hunting. It was damned good, good enough that I would absolutely kill geese again to make it into summer sausage.

I made a big batch of goose jerky out of the two honkers pictured. Everyone tried it. Nobody wanted seconds. I'm using it as dog treats now.

We soak them in buttermilk for 3 days, and then make cured jerky out of it. Makes pretty good smoked jerky and/or peppered jerky, but don't try to "just a little salt and pepper" it. Flavor's still much too goosey for that.
