Speckled trout recipe (not fried)

So no more frying fish for a while

What are some non fry options? All my hard scale fish I grill (reds/drum) but have a bunch of trout.

Light dusting of Dizzy Pig Raging River and then grill or smoke to your preference. Always a winner at my house. I prefer to grill ( flesh down 2-3 minutes, skin down until ready) bc too much smoke can overwhelm the flavor of the fish in my opinion

Do it outside unless you have very good kitchen ventilation.

Clarified butter so it doesn't burn.

Get some of those tennis rackets. Spray with Pam.

Sprinkle filets with garlic salt and then Tony C's. I do pinkish.

Baste is a stick of butter, whole squeezed lemon and about 15 shakes of Worcestershire. Key ingredient is a table spoon of Coleman's dry mustard. Baste liberally and serve hot. Very simple.

Best trout I ever had we made on a cheap AF electric skillet. A stick of butter, lemon pepper and a touch of Tony's is all we had. And it was out friggin standing.

I like the way Josie's in POC cooks it when you bring in your own filets. Pan seared with bell peppers and onions.

En Pappiote is my favorite for healthy and delicious.

Other times, I'll make a ginger lemongrass broth and poach it in the broth. Once the fish is cooked I'll thicken the broth with a cornstarch slurry and serve it with steamed veggies and the sauce poured on top. Baked is healthy, but, not a ton of flavor going on.

Vera Cruz and other recipes calling for olive oil are going to be tasty and healthier, but, still higher in calories

If you're Blackening your fish correctly, it's probably not much healthier than fried. I'd rather have anything above than a "low-fat" version of Blackened.

The oil you use is important. Clarified butter or coconut oil is the way to go.

Both of these oils are fine on the Whole30 plan, which is more of a "find out what affects your digestion" rather than a diet (although you do lose weight). Basically, you eat protein, vegetables (potatoes are fine), no bread, no sugar. You eat a lot of raw vegetables. I lost 20 lbs in 2 months (ate like crap and gained it all back), but now I'm going on it permanently with a cheater meal one day a week.

I highly recommend Paul Prudhommes Blackened Redfish Magic seasoning. It's a little more expensive than the rest, but, best flavor and balance. I've bought every brand on the shelf and blended a few of my own. Nothing beats it.

We use spices we buy at the fishing expo from the same people every year.

We fry it using coconut oil on a flat top grill and then add clarified butter to the top for extra taste, and cover it with another cast iron bowl which seems to keep in the moisture. Tastes great.
