First time I've seen them at my local HEB so I figured I'd give myself something to do while I'm waiting on my wife to go into labor sometime this week.

How many hours, and to what internal temp, for BBQ-ed pork belly?

Coulda/shoulda done bacon. Outstanding homemade bacon is easier than I ever thought it would be.

Going to do it burnt end style.

Smoke to 160, pull and cube, coat in honey and sauce, put in foil pan and throw back on the smoker for 1-1.5 hours.

Smoke it for a few hours, cube it up, smoke some more, and enjoy it. Bacon burnt ends are awesome

Nice. Pork butts were on sale at HEB. $1/lb
Put this bad boy on today with some ribs for tonight








Then figured I would render the fat trimming down for lard and cracklins as a snack

I smoked some last week and they were easily in the top 5 greatest things I have ever eaten.

4 hours on low heat and then two hours in a pan glazed with Orange Chipotle Glaze
