I've lost most of my go to restaurants for this meal. So I'm asking two questions...

1. Can you share your recipe? Meat and process. I can cook fried chicken that you pay money for so any suggestions welcome.

2. Any suggestions in Round Rock or close by?

I've pretty much foregone chicken fried steak for the chicken fried backstrap we make at home.

I have access to a tenderizer and made cutlets from an inside round.

I went flour-buttermilk/egg-HEB frying flour.

The frying flour is seasoned enough and we love using it.

I have a deep fryer and we have been doing that lately since it is easier. Then we just use McCormick country gravy packet for the gravy.

If I have more time, I would use the cast iron skillet and make brown gravy with onions.

Texan cafe in Hutto. Jjs bbq off 1431 in CP (large is off the plate) Koppe bridge in BCS(same). Will follow up more later. Monument in Gtown is not too bad but portion is smaller.

Hullabaloo Diner in Wellborn, and Goodson's In Tomball have pretty good CFS. I've heard good things about The CFS at Longhorn Tavern in Bryan, but I've never had it.

Admittedly, I have not had it, but Hoover's is supposed to have a great CFS. It's not a far drive for you if you are really craving one.

I did have one at the Good Luck Grill that was on the plus side of decent a few years back.

Regardless of what you fry it in (preferably vegetable shortening) or how you fry it, I've never had much luck at getting the breading to stay on until I started letting it sit for half an hour after breading it before cooking it.

I've always used :

1 part cornmeal to 2 parts flower

Whichever seasonings I want. I like it spicier. Usually Lawrys, garlic salt, and a couple others.

Buttermilk. I make a dredge with the buttermilk and formerly listed spices.

Use cube steak that's been tenderized well. Tends to hold the dredge easier. Also use coconut oil. Tastes better to me.

I'm not particular about gravy - I like the steak spicier.

I'm kind of hesitant to share this story but when i came to A&M from Chicago i had my first chicken fried steak my freshman year at a restaurant in Fredericksburg, can't remember the name.

I asked my future wife then girlfriend what part of a chicken is this? Well she laughed, and then my future father in law heard about it and that brought on about a life time of yankee jokes to this point.

Needless to say, i became very careful with my questions after that.

Goodson's in Tomball isn't what it once was. Mel's is the place. Longhorn and Sodolak's in Bryan are both good.

None of that helps Steve out though.

Not the fancy small town no name joint we all think about for this, but Texas Land and Cattle has a pretty food CFS. They use some sort of spiced breading and it is good.

Texan cafe has a solid CFS near round rock.

I had a really good one at the Louisiana longhorn cafe in downtown RR a while back.

Good call. Louisiana Longhorn makes a really good CFS but whenever I go there I end up getting cajun/seafood.
Someone up thread mentioned monument cafe in georgetown. Dont go there unless you want boot tough thick steak that is bland and lacks flavor/seasoning. In east austin Jacobys has a Texas take on the deep south classic chicken in waffles with CFS and waffles on their weekend brunch menu. It is pretty great. In pville, springhill cafe used to make delicious CFS dinner or steak finger basket. But I haven't been there in a decade and I believe they moved to a buffet style, so that may be a no-go.
For a chain spot, I think Texas Roadhouse makes a pretty good CFS. It is thin and tenderized so you can fork cut it. I think they call it country fried ribeye on the menu. Dont freak out or attempt to gently lecture the high school waitress when she asks if you want brown or white gravy.

Louisiana longhorn and the Texan are both good choices. Dale's Essenhaus in Walburg is also good.

Monument has been trading on their name for about a decade. I'll never understand the fascination people in Gtown have with it and Dos Salsas.

It really is. The first time I ate there was in the old building and I was pretty impressed. It's steadily gotten worse in the new place.
