My ranking: Axis-whitetail-fallow-sika. Elk would top all those. Mule deer (from Idaho mountains) and pronghorn (from panhandle) were both good and ranked about the same and would rank between whitail and fallow. Mule deer from west Texas may rank lower based on what I've heard.

We have a lot of folks that have hunted them. Its is a very dark meat and its kinda like anything else as a difference between a buck and a doe and age. Older Fallow bucks in rut = pretty strong.
When we do a wild game dinner the Elk and Axis are the favorites with Blackbuck doe next, then Whitetail and Fallow.
I have a good Ag friend who comes here a lot and he has killed a couple of Fallow does. He did not care for the meat on the first one so on the second one he had it all done as jerky......it was some of the best I ever had.
Of course a lot depends on the cooking methods as well.

Best thing to do is go hunt one and see if you like it or not. Everybody is different.

That's funny. It seems like pronghorn is either at the top of someone's list, or at the bottom of someone's list. The pronghorn I've had was absolutely delicious.

Pronghorn off of grass is excellent. I've heard that off of sage they can be pretty bad.

I hadn't heard that, but might explain why mine was terrible.

I cooked up the first batch of pronghorn backstrap this evening, and it was delicious. On par with whitetail, but more tender.

I stayed on a place in western Colorado and they told me they can't eat their mule deer because they primarily eat sage. They said it makes the meat pretty much unbearable.
