I use Pioneer Woman's recipe for black eyes (hoppin johns). I soak my black eyes then saut in butter red, green and yellow bell peppers, onion, garlic, and celery. Then add the black eyes back and use chicken broth/stock to cook in. Add some ham hocks/ shanks and salt and pepper to taste. Also used about 1/2 to 1 teaspoon cayanne pepper. Yummy!
Second for Pioneer Woman's recipe. Wife's effort today was a home run but she used japs rather than red bell pepper..

I thought everyone liked black eye peas. As a kid I grew up eating them 3-4 times a month for supper.

Texture sucks, flavor sucks. Notice the recipes - most have all kinds of other things to actually provide flavor and texture other than mud.

Made the gumbo last night using venison sausage and substituting shrimp for the ham. It was delicious, even my 18 month old loved it
