TX Czech sausage quest

"A few months ago I was at Smolik's Smokehouse in Mathis to buy some smoked meats, including a link of their homemade Czech-style sausage. As I waited for my change, I asked the clerk what made this particular link of sausage a Czech sausage. "A Czech made it" was her simple reply without a hint of sarcasm. This spartan response piqued my curiosity and launched me into a search from Hallettsville to West for an actual definition of what constitutes Czech-Tex sausageto, if you'll humor me, find out how the sausage is made. We see them on menus all over Central Texas, but what can you expect when you bite into one?"

I found this article while searching for the Czech sausage "Jaternice or Jitrnice", pronounced "eatsa-neatsa"...a sausage similar to Cajun boudin.

True story here....

Standing in the line starting at the Czech Inn in West was a cute blonde that had just graduated from Mays. She's on her way to Fort Worth for business (works for a dealer going to a gun show) and is surrounded by male coworkers. Taps her chin and ponders aloud....(Polish:pole::polish:paul) "What's polish sausage?". Took a moment, but not long, to realize her mistake. TOO LATE!

My wife's family, mostly czech, introduced me to jitrnice, when we were dating. It is definitely an acquired taste.

Head sausage is some good stuff my dad and uncles taught me to eat it with a little karo syrup.

I'm glad Vinceks in East Bernard got a mention. I haven't had to do any work in that neck of the woods for a while, but it was always my go-to lunch spot when in town. I've even gone out of my way to get some of their products if I'm in the general vicinity.

What's the difference between head sausage and head cheese?

I've had head cheese and I enjoy it. Especially when it's a little spicy. If it's too bland it ruins it IMHO.

I think Jaternice = head sausage=liver sausage, but the Jaternice I ate growing up had little if any "liver" taste.

Jaternice: "A pork sausage common in Czechoslovakia that is made in the manner of traditional meats produced from this country. Also referred to as white jets, liver sausage or ring pudding sausage, a Jaternice Sausage is typically made from pork liver, pork snouts and/or jowls that are ground together with spices and cereal. White or wild rice may be added in addition to cereal as a filler and flavoring. Jaternice Sausage is a popular food with Bohemians which is often prepared for a dinner item that may be accompanied with sauerkraut or potatoes and various vegetables."

I believe head sausage is more of a meaty type. No gelatin is in it. It is cooked and ground up and typically in a gut casing. May have onions and barley or rice mixed in as well depending on where it is being made.

Head cheese is usually the same meats, but it is made into a load form with the gelatinous texture. Looks like sandwich meat almost.

I like both, but the head sausage is my favorite. Lots of different ways of making it. My great uncle makes good stuff and so does my BIL.

google jaternice and you will see "head sausage" it is much more like an actual sausage it is just made with meats of a hog head mixed with rice/barly.

Head cheese is chunks of meat in a gelatinous mixture that looks like someone puked in a container and froze it (my opinion of course). Google and you can see.

If it was in Wales, they would probably ban Czech Sausage because it contains no Czechs and is thus misleading.

After all, they banned Welsh Dragon Sausage because it does not actually contain dragons.

Sage, is an Alsatian thing in sausage. Czech is Salt, Pepper, and Garlic.

The only sausage type food close to boudin that is Polish/Czech is lelilka. Not sure of this spelling. It is a sausage with pork and other pieces of organs with rice or grits (whichever is preferred). Damn good stuff.

Um. I dont think what you said means what you think you said. Not even close to being what I was talking about. It's about calling something other than what it is, and not calling something what it is. Which has nothing to do with anybody drinking green beer and not being Irish.

I am of Italian heritage. I am sure that there are all sorts of food things that I could be offended by.

Hell, I even have some Indian blood. I am offended that the dumb ass Czechs brought their gross ass kolaches here when they stole my land.

I feel better though every time I eat a sausage and cheese kolaches.

Grandma is full Swedish, so I always knew a kolache as that pastry dish. Much confusion when I got to college.

I've had this conversation with a Czech co-worker before. Not sure how the conversation started, but he went through all the various nomenclature and how most people don't know the difference. I understood, but also had to add that a large majority of people learned the term "kolache" as a Little Smoky encased in dough made by an Asian lady at the donut shop down the street, not by some grandma with a heavy accent that will only make kolache with with apricot, cream cheese, prune, or poppy seed.

Get over it. You won't find anything resembling what we serve here as a kolach in the Czech Republic anyway. (Do you get offended when people call a single kolach a kolache too?) You'd also have a pretty tough time finding a klobasnek and if you did the sausage is very different than the Czech-Tex sausage of central Texas

My mom grew up in West and my Wife's family in East Bernard. I don't think anyone gave two chits about the difference before the internets told them they should

Maybe I used the wrong term of being offended. Maybe I should have used the word laughable. Oh, and my grandmother didnt even talk good english. And she was from Czechoslovakia. So dont tell me what a kolache is supposed to be like, cause I've had the ones from the old country.
