Turkey frying help- got the oil way too hot.

So the oil got up over 500, other than waiting an hour or more to cool, any tips?

It will drop almost 100 degree when you turn off heat and put in turkey. No big deal. Cool down to 450 then drop in bird. Did this today and no problems.

I agree. Oil that hot is likely going to be toasted. You are way beyond the smoking point of anything including peanut oil.

Had another bird in the oven and other things cooking. Just had the flame too high for too long.

Regular veggie oil. And I confirmed the temp with 2 different thermometers.

I went ahead and put the bird in at 500 with the flame off, it immediately brought the temp down to about 375. I relight the flame and got it to hold and 350. Took the bird out just a few minutes short of normal time and it was done almost perfectly.

That's great Finn. It is really hard to screw up a turkey, especially frying, as long as you monitor the breast temperature. It would be interesting to know how Mr. turkey would come out if you could keep the oil near 500.
I know some of the instructions years ago said to make your oil much hotter if you preferred it crispier but dont remember the actual numbers.

My electric turkey fryer does not even go that high. I think it only goes to 375 degrees F. So I guess that is an advantage.

My magic number for turkey breast is 161 or 162. When it hits the high 150's it is really climbing fast so that is when you should watch it closely. If you pull it at 162, it is damn near 165 by the time you get it out of the oil.

I just realized this..... since the thighs should end up a little higher temp than the breast, you could have lowered just the bottom half of the basket (assuming it is in a basket) so that only the backbone and thighs is in the oil for a few minutes. That would cool the oil down before you go ahead and lower the whole bird down into the oil.

Doesn't matter as it ended up great anyway, but just something to try if it ever happens again.

Nah,the bird was wholly thawed and I made sure to be very slow in lowering it into the pot and even with the hot oil expanding and boiling up when the bird went in I was safe.

At 500 degrees, you've definitely passed the smoke point and will have off favors. Keep going, and you'll get to the auto ignition point, a little over 600 degrees. That involves a visit from the guys in the big red truck.

Who wanted this bumped? The last time I posted was the day I cooked the bird and despite the temps getting too high the bird was outstanding.
