Yesterday, I got my hands on some nilgai antelope cutlets from a coworker. I received a recipe to use, but I would like to try eating it different ways. I've also started reading up more about nilgai. If you have knowledge about cooking nilgai, please let me know.

same as cooking venison, just tastes better. I consider Neilgai the finest meat that has ever been in my mouth.

Season as you would a steak and grill it rare. Or, depending on the thickness just pan sear it in a cast-iron skillet.

Nilgai is delicious.

So I cooked up axis burgers and nilgai and hands down the nilgai was better.

I used soy soy sauce and Worcestershire. Tonys. Garlic powder. Salt and pepper.
