I have freshwater fished my entire life, don't know much about saltwater. Do many people keep and eat sand trout?

Thaw and fry or bake them. You'll be fine.

Sand trout tend to get mushy if they aren't put on ice right away or eaten fresh. Taste-wise your fillets will be fine.
