I have freshwater fished my entire life, don't know much about saltwater. Do many people keep and eat sand trout?

Sorry, should have worded my question better. I know they are edible, but are they any good?

It doesn't freeze well so you need to eat it within a day or 2

Thaw and fry or bake them. You'll be fine.

Sand trout tend to get mushy if they aren't put on ice right away or eaten fresh. Taste-wise your fillets will be fine.
