May come across some axis deer venison this month if my aim is true. Never had it and have only ever processed my own whitetail venison usually by making ground meat (beef mix), sausage (pork mix), cubes for stews/etc, and backstraps/tenderloins for frying.

Should I try making sausage with axis vension? Or is it better to keep solo and use it in creative ways?

Axis is the best deer meat i have had. Chicken fry it... Make steaks out of it.

I wouldn't spice it up in sausage though personally

Top of the line venison - you will not be disappointed!
Generally get the backstraps, tenderloins, make steaks from the saddle, save the shoulder and rump roasts and grind the rest into hamburger meat.
The sausage is good as well - to each their own!
