This is what I use every year. Really tasty. I brine for about 12-14 hours then rinse coat with garlic paste and season it up. Cook on grill dome and it is outstanding.

Look at Alton browns recipe from food network. It has 4500 5 star ratings. I made it this past weekend and it was amazing. Very easy also

Also, you can brine for too long, 12 hours is plenty. I usually do 6-8 hours for brine.

Does the brown sugar give it a "strong" sweet taste?

no, you probably couldn't tell the difference no matter what kind of sugar you use unless you quadrupled the amount

+1 for Alton's recipe (the one from Good Eats). It does not give a strong sweet taste. Also, try adding some bourbon to the brine - maybe 1/2 cup for every 8 cups of water

Add bourbon? Sounds interesting. I hate to waste good bourbon though.

What's the point in buying cheap bourbon?

To put in a brine and give to "friends" you don't really like, of course

I've always heard never use alcohol in a brine or marinade.

Alcohol is a natural meat tenderizer, much like the enzymes that come from fresh pineapple, etc.

I have used the Pioneer Woman's brine recipe the last few years

I agree, never too good for Jack. But I sure as hell am too good for Rich & Rare.
