I am looking for a fajita marinade. Anyone have an awesome mind blowing recipe?

i think the carniceria up the road uses msg, cocaine, salt, paprika, and lime juice.

The one I use is (and sorry, I don't measure):

Cumin (comino)
Roasted Coriander
Kosher Salt
Fresh cracked pepper
2-4 garlic (mashed)
Olive Oil
juice of 2 limes

Let it marinated for a minimum of 2 hours.

We don't marinade. We use Fischers meat market meat powder from Muenster TX.

But then I put that on everything. Because it is the bomb.

Wishbone Italian Dressing
4-6 splashes of W Sauce
1/2 a lime (squeezed)

Shake it up real good and let it marinade overnight

Learned this from a Mexican place I worked at in high school many moons ago:

Orange juice from frozen concentrate--1 gallon.
Gold tequila (has to be gold)--1/2 bottle
Soy sauce--1/3 cup
Lime juice--1/2 cup

Marinate at least 6 hours in fridge, throw meat on soaking wet.

Using beef flank/skirt steak
-lime juice
-soy sauce
-olive oil
-cayenne pepper
-cumin
-crushed garlic
-salt
-pepper
-+/- tequila

Cooked to medium on cast iron griddle... best I've had outside of Lupes/El Tiempo in Houston.

I haven't tried it on fajitas, but Claude's marinade is pretty damn amazing on steaks.

You know I see lots of people using soy sauce, but I think youre covering the taste of a good cut of meat . Good fajita meat, meaning flank steak for us, doesn't need much on it.

Don't forget to throw in the onions and bell peppers with the rest of the marinade while it sits in the fridge for several hours.

I'm speechless. All you need on a steak is pepper and kosher salt. Maybe a pat of butter on a ribeye after you take it off the grill.

To me it doesn't seem to cover up the flavor of the meat I just substitute it for salt.

I use soy sauce
Olive oil
lime juice
cracked black pepper
garlic powder
onion powder
chipotle powder
ancho powder
and a little mexican chile powder

Idk why y'all like Claude's. It's pretty much liquid smoke. Something concocted from the fridge for a marinade works just as well.
