Not sure about other HEB's but the HEB Plus near me has a yearly promotion. For two consecutive Saturday & Sundays, they have these large roller type roasters. When they are working, you can see the seeds dropping out of the peppers as they get roasted. Then they sell the roasted product. This stuff smells great!
Does anyone have a good recipe that uses these Hatch Chiles?
HEB has a few recipes, but none that I am really interested in. As an example Hatch Chile Bread...I am not interested in baking bread. I want something served with or cooked with meat.
They do have Hatch Chile Pesto which looks pretty damn good. (But what do I cook with it?)
1 cup Hatch Chile, roasted,peeled,seeded
1 cup chopped fresh cilantro
1/3 cup pine nuts
1/2 cup grated Parmesan or Pecorino Romano
1/2 cup olive oil
Use food processor...yields one & a half cups.
I see customers go there and get a YEAR's worth of these roasted peppers and freeze them.
