It's usually cool enough in November that you don't have to worry.
I've packed several 100 pound loads out. Distances ranged from 1 mile to 4.5 miles.
I'm not trying to brag, but I'm in extremely good shape, and a couple of those packs nearly made me hit the wall. The old adage of "The work really begins when you pull the trigger" holds true to the nth degree there.
Since 2004, I've killed 5 deer there. Two 6 point muleys, a small 9 point whitetail, and two large 10 point whitetails. Seen others I could have shot but didn't for various reasons (too small, too far, etc.). None of them were easy though. I had to work hard for all of them.

There are tons of public hunting lands near dallas, but you need the public hunting permit. A general rule of thumb is that anything close to dallas is going to be hunted heavily.
Deer carts don't work too well in salt cedar thickets.
There is a maintained trail that goes down to Devil's Canyon and some roads around the recreation areas, but other than that, it's canyon country, and you are either bailing off into canyons of busting brush in the bottoms.
