I shot a Nelgai a few weeks ago and I just got 200# of meat delivered. Backstrap, Ham Steaks, Ground Meat, Pan Sausages, Links. My garage freezer is full. Gave away half already.

Can anyone share a good marinade or recipe for the ham steaks or backstrap?

Wrap the nilgi with bacon, stuff 20 lbs of jalapeno in the center. Cook fat side down 225 degrees for 71 hours.

Serve with garnish.
