Ouachita trail, it stretches through oklahoma and arkansas. It runs like 200+ miles but lots of places to start and stop easily for smaller sections. Plenty of water. I've done a couple parts of it and really enjoyed it, its challenging but nothing horrible. Let me know if you want more info.
