We have a Asustor NAS 4 bay used primarily for backing up our home files and pictures.

Am I able to use this as a VPN so that while I travel internationally I am able to watch streaming services as if I am at my home? Right now I use ExpressVPN which has been great, though I am up for renewal in 12 days and would love to save a few bucks there if I can.

Your looking for a home VPN server you can expose. I wouldnt use the NAS for this. Easiest is to buy a Raspberry Pi and set it up yourself. They are cheap and the software is open source.Your provider actually has the ability to set their service up to run on it at well if you keep the subscription. See "ExpressVPN with Raspberry Pi" section in article below.

Use tailscale with machine inside your network as the exit node.
Should be seamless and free
Actually looks like you can install tailscale directly on the nas from their store
