With a gallon of milk up about 25% since before the pandemic, and retail bacon 35% higher, it's hard to imagine how US food inflation could get any worse. But evidence suggests that even higher prices are on the horizon.
Consumers have actually been shielded so far from the full brunt of soaring expenses that are facing producers, distributors and small businesses like restaurants. But they can only hold back for so much longer.

Take the case of Jeff Good, who co-founded three restaurants in Jackson, Mississippi. Around 18 months ago, a 40-pound box of chicken wings cost him about $85. Now, it can go as high as roughly $150. Expenses for cooking oil and flour have nearly doubled in the past five months, he said. But it's not just ingredient prices going up. He's paying more for labor and services, too. Even the company that maintains his air conditioners has tacked on a $40 fuel charge per visit. To cope, he's raised menu prices.


A 15-piece order of chicken wings, a signature dish at his Sal and Mookie's pizzeria, went for $13.95 before Covid hit. Now, wing costs can vary so much they're labeled at "market price," like some restaurants do with lobster.

At peaks, the menu price can be be about $27.95
but that represents a barely-there margin and Good estimates the "real cost" is closer to about $34. He's trying to decide whether to keep raising prices or take wings off the menu.

Crab cakes have been MKT price on many menus for some time now. Local seafood place called TJ's here in Dallas offers two crab cakes for $45. Most expensive thing on the menu outside of sometimes being surpassed by whatever mkt fish of the day might be.

The bigger issue is that people found out how much better chicken thighs are when wings and breast meat became expensive.

We basically gave up on restaurant wings and learned how to make our own. Just made them last night and my wife has pretty much gotten it perfected. Now we can get them a lot cheaper and with better quality control than at a restaurant. The only reason we would ever buy them from a restaurant now is just to save time.

What is a realistic price you'd expect to see for wings at a restaurant? (what is market price?).

- I'd say $.050 to $1.00 per wing is about right.

What the max price you'd pay at a restaurant for 10 Wings?

- $15.00 is my cut off point.

WIngs out for me is a rare thing mainly because it's not the healtiest thing for you but went back in Spring and the pricing on the menu said market price....what the F"...like it's lobster or something. Funny that places are pushing thighs now.

Good friend of mine has a chicken distribution company that has been in his family for over 100 years. His main supplier of over 70 years just cut them off and he is having a very hard time finding a replacement. No one has supply. He has only a few more weeks and then the business is going to go under, a century plus of legacy gone.

Part of the problem is like brisket and skirt steak, these lesser cuts of meat that had been cheap became popular with the hipsters and affluent whites driving up the prices.

I know it's not at all the traditional recipe, but can confirm that when you cook them for a few minutes in the Instant Pot, then toss them in some seasoning and corn starch and crisp them up on the grill, they are awesome.

What's really funny is that wings were the thing that got 'pushed' as a byproduct a long time ago and now people are acting like thighs are just the byproduct of a broiler having wings.

Wings have been dropping a while now. They are now around that 1.85/# mark for jumbos.

What is crazy is the price of jumbo random breast. It is nearing $4/#. Never seen this before.

Same as 'fajita' meat... some butchers would toss it many years ago, and some would just try and grind it.

And it makes me so, so sad.

Grilled chicken thighs are on the menu every week at the Buster household. I used to be able to find them for between $0.79 and $0.99 per pound.

More likely to see them at $2 / lb now.

Well the good news is bill gates and the elite have been working on alternatives to meat that they plan on injecting mRNA vaccines into. So we have that going for us now.

Mostly safe, free, and effective. And super tasty.
