If it was one band for the rest of my life, I'd have to go with Third Day. I would need to listen to a Christian band.

George Strait would be next. He has such a large catalog of great songs.

I listen to mostly rock, but that would be too intense for me to only hear that all the time.

Gotta have a massive catalog for sure. Ideally with a lot of variety and experimentation.

This is recency bias for sure, but I've been going through a Springsteen run and not only does he have a ton of albums, some of his recent ones are VERY good, and he has about 20 live albums and B-sides and demos and things like that.

If it can't compare with that, I'd probably have to pass.

Pearl Jam would also be good because you get hundreds of live albums.

If limited to listening to only one band/singer I imagine some type of Dystopian landscape where the world as we know it has ended and while scavenging for food or supplies I stumble across an ancient CD player with some battery power left but it only has one CD in it. In that scenario I would be in a lonely, melancholy mood and the sounds of James Taylor's 1976 Greatest Hits album would hit me just right.
