I'm an old school fallout junkie since the first PC game. Love the games, love the lore, have heard great things about the new tv show.

My wife knows nothing about Fallout, would she still enjoy the show?

Yes. There are lots of fun Easter eggs that make it that much more enjoyable for the fan of the games, but it's not at all necessary to follow the story and enjoy the show.

How would anyone know that? We don't know what your wife enjoys.

They do a great job with bringing the world and tone to the screen. A lot of over the top violence, like the games. Great character work with a good story.

If your question is whether you need to be a fan of the games to enjoy it, then the answer is: you do not.

I just started rewatching S1 with my wife. I just cover her eyes when I know an especially gory moment is coming and she's enjoying the rest.
