The Birds - meh. It was good (great even) for it's time but you've probably seen everything great about it somewhere else.
Casablanca - worth watching for Renault alone.
Casino - how is this possible?
Cool Hand Luke - best version of the christ story put to film
Dances with Wolves - meh you've seen avatar
Erin Brockovich - meh most overrated actress in Hollywood
The Firm - meh
Fletch - brilliant
Gone with the Wind - Rhett is a god among men
Jackie Brown - I missed this on theaters and keep forgetting to watch it
Mulholland Drive - there is at least one great scene
Psycho - Vince Vaughn worst movie

I think I've seen most of everything posted so far. Everyone should go see all these movies, I haven't seen many that I wouldn't recommend.
Some just for the history of movies more so than enjoyment. Citizen Kane for example isn't super enjoyable these days, but if you can put it in the correct context and know a little about it's contribution to movies, then it is amazing.

Hard to just think of the movies I haven't seen, so I can only address what has already been posted:

Casablanca
Raging Bull
One Flew Over the ****oo's Nest

Looking at some of these lists... it both makes me sad that some posters haven't seen movies I consider to be in my top 10 or 20. On the other hand, there's also the great thought that they will one day see these movies and be wow'ed.

Not having ever seen The Shawshank Redemption just amazes me. I can get some people thinking a movie like The Godfather is not their thing, but Shawshank...

The problem is a lot of these just don't land today.
Like psycho... Showing a flushing toilet doesn't just completely put an entire theater on edge any more.

Or showing a chick (Scarlett) smiling in the morning somehow isn't going to make all the women in the theater a little lightheaded at what was implied

I think the biggest problem with some movies, at least for me, is they are so ingrained in our culture that they are ruined. I already know the twist ending to a movie like Psycho and The Usual Suspects, so I've never watched them

It would be fun to do an Entertainment board weekly movie club where we either go down a list like the AFI 100, or do a poll to come up with a movie, and discuss it.

That would probably get me to see a movie I just haven't felt in the mood for, yet. I think of movies like 12 Angry Men, and wonder if I would have ever seen it if we hadn't have seen it in school. It is so freaking amazing, and I'm so happy I had to watch it.

I've floated the idea of us doing a version of the podcast "The Rewatchables" where someone presents a great movie and we all kind of pour over it. Someone could do like the trailer, the great scenes, and some movie trivia on it, or we could could post a movie and we all try to watch it the week before we discuss it, I was very late to that Bill Simmons' podcast, but it's so fun.

I made it a point to watch the AFI list (both iterations) and Oscar winners several years back, so I've seen most of the "should watch" movies. Most of mine are either recent Oscar winners/nominees or 80s/90s movies, particularly comedies, that a lot on this board clearly grew up with, but were just before my time. I've seen plenty from that era, but there are still several gaps.

Just between bigcat and TC, like over half of my all time favorite movies are on those 2 lists.

On those 2 lists I would start with Casablanca and SW Ep 4.
Both were revolutionary and much of what we watch in those genres comes from those films. And Casablanca has my favorite scene in the history of cinema (the French national anthem scene).

Ad for me, haven't seen Harry Potter at all. Tried a few times and it just wasn't for me. F&F as well.
