I've tried this twice, and am no wondering if anyone else had the same results-

Eat spicy jalapeno sausage in the morning, and drink black coffee with.

I noticed it seems to really cut the heat.

Had the same sausage the evening before with just water, and whooo, it had some good kick.

Could black coffee be a heat killer?

Coffee with cream is a much bigger heat killer. Dairy ( Milk/cream) act against the pepper that makes the sausage hot. The water in the coffee doesn't do anything to diminish the heat.

Some acids are good deactivates of capsaicin.

Citric acid iand acetkc acid are particularly good at it, which is why if you want to eliminate alot of the heat from a habenero pepper and just leave the sweetness soaking overnight in lime juice works great.

However that reaction does take some time.

Roasted coffee beans do have decent amount of acid in them though particularly

chlorogenic, quinic, citric, malic, acetic, formic, lactic, glycolic, and phosphoric acid, and occasionally tartaric acid is also found

So that could be why it helps.

The dairy does form a barrier around the capsaicin like soap bubbles lifting it off ur tongue.

So coffee with creamer would be a 1-2 punch to reduce the heat.
