I'd eat Velveeta queso wayyyy before eating any type of dish with both it and cream of chicken soup like the ones that have been suggested here. Those sound like disgusting slop.

Peppers, always. Tomatoes, debatable. Rotel, however is disgusting. I'll eat picadillo in good Queso but prefer it without.. Plain ground beef, no thanks.

Rotel is diced green chilies and tomatoes. Is it not fresh? Is that why you don't like it?

Canned tomatoes and green chiles are fine. Canning them together…not so much and the quality of tomatoes in Rotel is piss poor. The ratio of tomatoes to peppers is also wrong for Queso. Is it really that much harder to open 2 cans?

Now a days though, it's the HEB queso where I pour some beer in, throw it in the oven or smoker, and win!

sometimes I'll just cut off slices of velveeta (store brand tho) and open a can of canned tomatoes and green chilies (also store brand) and I'll place the "velveeta" slice on a saltine and spoon a little of the tomatoes and green chilies on top just to class it up a bit
