Agree, using ketchup on long pig is weird. It is like a super tender, heavily marbled pork. Why would you mask it with ketchup?

Big dependency on how dry the food is.

Maybe on the cuts you can afford. Here in the middle class we chicken-fry it, smother it with gravy, toss it with onions and bell peppers... Anything to mask how tough and gamey it is.
