As a current resident of North Carolina, I can confirm that Carolina barbecue is...not great. It's like eating pork and and vinegar flavored Big League Chew, but less fun.

I flew into Charlotte this summer. I stopped at Kyle Fletcher's BBQ (4507 Wilkinson Blvd, Gastonia, NC 28056). It's about 15 minutes from the airport and a very easy drive. Food was very good, IMO. It's a hole-in-the-wall; there are lots of photos online. Cash payment only.
