Marty returned to 1985 to live his life. But he'd aged during that time. So as an outside observer you'd see Marty age a few days in what seems like an instant.
Doc didn't ever come back, nor is there reference to him being around from 1985 and beyond. He visits the future, but there is no 2015 Doc. After 1985 Doc visits 2015 he comes back to get 1985 Marty to set the future straight. Then he ends up in 1885 where he, Clara, Jules, Vern, and Copernicus become "Time Ramblers" who just explore and observe since they shouldn't actually exist.
(Clara had to disappear after not dying in the ravine, the boys just weren't, and doc fell out of being within time as we know it when he never returned to 1985.)

Ok. I see that now...for Marty and Jennifer. As previously pointed out Doc did not go back. I mean he did, but he went way back and lived a life which would not have him existing in 2015.
