And think about this: Velveeta isn't in the cold/frozen section of the grocery store. It's just sitting in the lumber/tools/fertilizer dept.

I don't have a problem with processed cheese in and of itself per se, but, Velveeta is flat out disgusting. It's worth the trouble to find Land o Lakes Extra Melt for Queso. Rotel is gross too. Just buy a can of green chiles and fire roasted tomatoes (or better yet good salsa) if you're too lazy to make queso from scratch.

worked with a dude that did an internship with some cheese company and he told me that "velveeta" type cheese is just the foamy stuff they scrape off the regular cheese every morning.......not sure if that is accurate but it hasnt slowed me down over the years.

It's not at all accurate.
Processed cheese is the result of real cheeses emulsified in a liquid using a type of salt. Check out the Sodium Citrate Queso thread on the Food Board and you'll get the gist.

Oh wow, that led me to the Velveeta Wiki page. Turns out it used to be made of real cheese for its first 75 years and no longer is. I thought I simply outgrew it. Turns out Kraft reformulated to the disgusting version on shelves today on purpose
