Thanks to you all for those great suggestions. We went with OST. I had the ribeye cooked medium rare with a baked potato. I added three hand breaded shrimp. I gave two of them to my father in law because he loves shrimp and he let me marry his wonderful daughter (he ordered The chicken fried chicken because our waitress said its their specialty). The ribeye was good, with just the right amount of ketchup. The shrimp was fantastic, lightly breaded jumbo, likely caught fresh that morning. I'm going to give the place a 3.5 out of 5.

So far this volleyball season, my former brother in law's family's place Herman Sons in Hondo takes the top spot closely followed by Sammy's in the Ville. That place we ate at on the river in Kerrville comes in last. So good I don't remember the name.

Never been to Waffle House or Huddle House (??? Wtf is that). Last time I went to an IHOP or Denny's I was in grade school. Sorry my parents loved me and made me good breakfasts and then taught me to make them too.

ETA: I couldn't sleep tonight. Ewww...that egg is raw, most recipes say to use mozzarella as a substitute, and use tarragon in the bread dough.

Huddle House = knockoff brand Waffle House from Georgia. They have actual tables and booths for fancy eatin' like IHOP but far less old people. Not quite SEC ready, not quite Big 12, they're the Mizzou of breakfast establishments.
