Go to the travel board anyway, and do a search. There have been a ton of Santa Fe threads.
Eat at Gabriels on 285 north of town. Great Mexican food, and have guacamole made table side. It's also near Buffalo Thunder resort/casino and the golf course mentioned above.
Beyond that, depends on how much of a museum/history nerd you are, and how much driving you want to do. Art galleries are all over Santa Fe. Pecos wilderness is pretty, and there is an interesting pueblo/mission ruin to the south of there. Los Alamos is nearby and has some good museums on nuclear (Manhattan Project) and local history. Bandelier and the cliff dwellings are cool. Valles Caldera National Preserve is the prettiest drive you can make. Hot Springs in Jemez.
Heck, there's even a bug museum in a mall on the north end of town.
