Hatch chili burgers and salsa
When a mommy and daddy chili love each other very much a chili egg is made. Then after some time a hatch chili emerges.

Not too familiar with this phenomenon either but I will admit we had a hatch pepper spiced rotisserie chicken from HEB last night and it was delicious.
I've never even heard of that.

My wife is from New Mexico, so we've been eating Hatch way before they became an "it" food. It's interesting how the popularity has exploded and is very similar to what happened with chipotle peppers a few years ago. I love them on burgers but I don't think they're this magical pepper that some make it out to be.

I grew up with them since I had family in New Mexico. They just add a really good flavor to your food without over powering it with too much spice.
Although, one issue I do have with a lot of the green chile products that you find in Texas is that most of them are not spicy at all. In New Mexico you can find some really good green chile salsas that actually have a little kick to them.

Whenever I get to Ruidoso, I love to hit up Allsups for some Hatch and Cheese burritos.

Great flavor without a lot of heat.
My favorite is roast chiles and take off the outer layer, stuff with ground beef, red onion, garlic and mushrooms. Throw them in the oven and finish by melting a slice of pepper jack cheese on them. Great flavor. Crowd pleasing appetizer no matter what we are going to have for dinner.
