Catfish sucks. If you have to deep fry it to make it edible, then it's not a good fish.

As long as I have some good hush puppies with my catfish, any combination of sides are fine with me. Gotta have the hush puppies, though!

Because they do it right and dedicate a fryer for the fish. None of the other locations have room for the extra fryer. Cross-frying would kill the taste.

I grew up in East Texas where fish fries were common, and we rarely had beans. It was always fries, cole slaw, and hushpuppies.

I prefer a ribeye or T Bone as my sides, then I eat those and put the catfish on top of the playscape. Then I sit and watch all the cats in the hood come over and I let the dog out to "play" with them. It's a great way to spend an afternoon.

Fried okra or okra and tomatoes is good.

Texas has over 3,300 miles of tidal shoreline offering any number of superior fish species than dirty ass catfish pulled from a farm or muddy reservoir.

Speckled trout, redfish, snapper, grouper, cobia, flounder, or even a well cleaned sheapshead are all superior and just as Texan as catfish. Most of that **** comes from Vietnam anyway these days.

Does this all change with fried Bass, Crappie, Perch or trout?

Someone doesn't know squat about catfish. They thrive in most of the state's cleaner and clearer freshwater rivers and reservoirs, and most of them feed heavily or even almost exclusively on baitfish once mature. They are far from detritus-eating bottom feeders.

They have a light flaky flesh that is not excessively grainy or fishy tasting. A hill country flathead catfish in the 5-10lb range is spectacular dining, for example.

Also, gaff topsail catfish, aka gafftop are fine eating fish once you get past the slime on the outside and filet them. It depends on your flavor and texture preference for fish.

I prefer fried cod over and my sides are macNcheese, coleslaw and bread and butter pickles.
