Anybody have a recipe for something like it? I know it's a love/hate thing, but I happened to like it and live too far away to get it anymore.

Thanks, Scarlet, although I think that recipe left the cream cheese out. She mentions it in the directions, though.

She mentions half a block in the copy before the recipe, so maybe she still uses that amount.

Here is mine

1 2lb bag frozen corn
1 can corn (not drained)
1 block cream cheese
2 sticks of lightly salted butter
chopped pickled jalapenos slices and a bit of the juice from the jar to taste.
Salt and pepper to taste.

Cook in crock pot stirring occasionally. Takes about 4 hours and only gets better the longer it cooks.

Alright people....

This is the recipe for J. Codys corn....

1 white onion
2-3 fresh jalapeños
2 large cans of whole kernel corn (drained)
3/4 stick of butter
1 block of philly cream cheese

Dice onion. Dice jalapeños with seeds. Sauté onions and jalapeños in butter til onions are translucent. Add corn and cream cheese. Stir thoroughly and simmer. Add salt and fresh cracked pepper to taste.

It's even better the next when you reheat and add a little milk or cream.

Marscopone Cheese is the REAL key

cant believe im gonna divulge this.......



4-6 Ear of corn - grilled w/o skin in a little Oil and Salt - high heat to char - appox 8 min -

Remove and place in bowl/ pan and cover with plactic wrap until cool

cut off cob - reserve 1 cob

Add kernals, one cob, one clove minced garlic, 1 c Cream, salt, pepper, and 1 tsp rubbed sage to a saute pan and allow to simmer untill reduced and slightly thickend. Add a Tbs or 3 of Marscopone Cheese
